Tomato Curry

    **Ingredients:**

    * ½ finely chopped onion
    * ¼ teaspoon cumin seeds
    * ¼ teaspoon mustard seeds
    * 2 roughly chopped tomatoes
    * 1 teaspoon (Kashmiri) chilli powder
    * ½ teaspoon coriander powder
    * Salt to taste
    * 1 cup water
    * 1 tablespoon butter/oil
    * Few curry leaves [optional]

    **Instructions:**

    1. In a heated saucepan, put in the butter/oil, cumin & mustard seeds
    2. When the cumin or the mustard seeds splutter, add in the onions & fry until softened
    3. Now add in the salt, coriander powder & chilli powder
    4. Add the tomatoes & mix thoroughly
    5. Lastly add 1 cup of water & cook until desired curry consistency is reached

    **Garnish:**

    1. Fry some curry leaves in oil/butter & add ’em on top of the curry

    Ready to eat! Serve hot with idli, dosa or toasted bread (goes best w/ idli imo)
