Long time lurker, first time poster. This is my beef and Red wine stew and it’s pretty darn good imo.

Ingredients are:
– 500(ish) grams brisket (any slow cook suitable cut is fine)
– couple of onions, finely diced
– couple of carrots, diced
– 3-5 cloves of garlic, finely chopped
– 300mls red wine, plus a bit extra to deglaze pan.
– half a tin of tomatoes (in hindsight I probably should have just gone with tomato paste as sauce was a bit too loose)
– salt, pepper, oregano, rosemary

Season beef with some salt and then sear it off and place in slow cooker. Sautee the veg, and then add the seasoning. Deglaze pan with a glug or two of wine and then transfer to slow cooker.
Add remainder of wine along with the tomatoes, and then cook away. This one got about five hours.
Shred the beef when done, return it to the sauce and then serve it up.

I served over some home made sweet potato gnocchi, but tbh this works just as well over mash, pasta, or as the filling in a lasagne.

Also good as a pie filling, but the sauce would need thickening.

Main thing for me is my kids ate it without a fuss so that’s a huge win!
