I made The Soup! I used a mix of seasoned ground pork and beef (basically sausage outside of a casing), and 2 types of tortellini: 3 cheese and jambon cru.

I think it turned out very well, although the bleu cheese in the tortellini is a bit strong for this recipe, IMO. I’d love to try it again with a different 3-cheese blend, if I could find it, or another flavor of tortellini altogether. What kinds have you tried? What are your favorites? 😄
