I’m always trying to eat more veggies. This soup tastes AMAZING in the slow cooker. The potato/carrot blend melt and caramelize and develop a rich, comforting umami flavor.

• 1 tbsp coconut oil
• 2 chopped onions
• 4 cloves chopped garlic
• 1 tbsp chopped fresh ginger
• 2 tbsp red curry paste
• 3 cups chopped carrots
• 3 cups chopped sweet potatoes
• 4 cups low-sodium vegetable broth, plus more if needed

*soup*
• 1 tbsp coconut oil
• 2 chopped onions
• 4 cloves chopped garlic
• 1 tbsp chopped fresh ginger
• 2 tbsp red curry paste
• 3 cups chopped carrots
• 3 cups chopped sweet potatoes
• 4 cups low-sodium vegetable broth, plus more if needed
• Salt and pepper to taste

• Minced fresh cilantro
• Fresh lime juice
• Coconut milk
• Peanut butter
*instructions*
Put everything for the soup in the slow cooker on high for 4 hours. Slow cookers vary, you can also cook on low for 10 hours.
Blend the soup in batches or using a hand blender, adding more broth if the soup is too thick.
Finish with toppings to taste.
