    Adding some context and recipe.

I trimmed the excess fat from the bone in pork shoulder. I seasoned the shoulder heavily with kosher salt, fresh ground black pepper, smoked paprika, onion power, and garlic power. I finely chopped a whole yellow onion and about 6 cloves of garlic that I put on top of the pork.

I add no other ingredients and put the slow cooker on low for 8 hours. All that juice you see is from rendered fat and it is sublime!

Super tender and not dry at all.

Ways to eat it? Pulled pork sandwiches, also put the pork in a frying pan and sear it for about 5 minutes for some of the best carnitas you have ever had. Tacos, eggs Benedict, sandwiches, mix it with some rice and beans… you name it. So damn good!!!

When I slow cook this I go for a Hawaiian *kalua pig* style so just a few stabs, rub with Hawaiian sea salt, and a little bit of liquid smoke.
