Roasted Potato Gnocchi

    Ingredients

    • 3 pcs medium sized potato (boiled)

    • 1 cup flour/maida

    • 1/2 tablespoon salt

    • 1/2 tablespoon black pepper (crushed)

    • 1 medium onion (chopped)

    • 10-12 cloves of garlic (chopped)

    • 1/2 tablespoon red chilli flakes

    • 1/2 cup green peas

    • 1/2 cup mozzarella (shredded)

    • 2 tablespoons butter

    • 1 tablespoon olive oil

    Instructions

    1. Peel the boiled potatoes and put them in a bowl. Mash them with help of a masher. Mash the potatoes for 5-10 min until it’s smooth and lump-free.
    2. Add flour, salt and black pepper. Now start kneading the dough. The dough should be soft.
    Add more flour if the dough is too sticky.
    3. Rest the dough for 5 min. Now will start making the gnocchis. Sprinkle some flour on the table/working station where you will make the gnocchi.
    4. Take 1/3rd of the dough and roll it into 1 inch logs. Cut into 1 inch pieces. Use flour on the knife as well as otherwise it can stick. You can make design with back of a fork. Just roll the gnocchis on the back of the fork and it will get nice ridges. Or you can keep it as small logs.
    5. Likewise make gnocchis with rest of the dough. Dust flour on the gnocchis to prevent them from sticking.
    6. Boil water and add the gnocchi in batches. Once they start to float, they are cooked. It will take 5-8 mins to cook the gnocchis. Once cooked, strain the excess water and take them out.
    7. In a pan add butter. Add olive oil. Add the gnocchis one by one into the butter.
    8. Fry the gnocchis for 4-5 min each side, medium flame. Flip and fry the other side when its golden on one side.Frying/roasting the gnocchis gives it an extra depth of flavour.
    9. Add onion, garlic, black pepper, red chilli flakes and salt. Saute for 5-6 min on low flame.
    10. Close the lid for 1-2 min, let the onion soften up a bit. Open the lid and add the peas.
    11. Saute the peas with the gnocchi for 1-2 min until it softens.
    12. Add the mozzarella cheese into the pan. Let it melt for 1-2 min.
    13. Serve hot. It tastes yummy!!
