    We bought too much butter a few months ago and as I was doing “fridge cleaning” tonight, I realized that I had 2 pounds of butter that expires in 2 days. Alas, I used 2 sticks of it to make 18 sugar cookies and it only cost me $3!

    Cost breakdown:
    Aldi’s Butter: 2 sticks for $2.37
    Aldi’s Flour: 2 cups for $0.49
    That’s Smart Sugar: 2/3 cup for $0.23
    That’s Smart Vanilla Flavoring: 1 tsp for $0.01
    TOTAL: $3.10 for 18 cookies!

    Recipe from Bellyfull:

    2 sticks butter, room temperature

    2/3 cup granulated sugar

    2 cups flour, spooned and leveled

    1 teaspoon vanilla

    Preheat oven to 325 degrees F. Line the pan with a silicone mold or parchment paper. Mix together sugar and butter – it will be a little gritty. Add flour and mix until a dough forms. Add vanilla and mix again. Roll dough into spheres and place two inches apart on the pan. Smash down with a glass or bottom of measuring cup. Bake for 15 minutes. Remove from oven and let rest for 10 minutes. Then, enjoy!

    Just fyi, you can freeze butter.
