Ingredients • 100 ml Rice Vinegar • 100 g White Sugar • 1 tsp Kosher Salt • 1/3 Cucumber halved lengthwise • 3 Shallots peeled and thinly sliced • 1 Green Chilli deseeded, thinly sliced • 1 Bird’s Eye Chili deseeded, thinly sliced
Instructions 1. To make the pickling liquid, mix the vinegar, sugar and salt in a bowl. 2. Slice the cucumber using a mandolin. Add the sliced cucumber, shallots and chili to the pickling liquid and stir together. Set aside for 1 hour for the ingredients to pickle. 3. Once ready to serve, drain the liquid from the pickle and serve.
