Price not including butter/nuttalex, i usually eyeball this recipe and i only cook for myself and a partner sometimes so measurements will be off, use good judgement and adjust proportions respectively.
I buy half a butternut pumpkin and use it for other things, but this is for 1 person. Chop about a centimeter of the small end of the pumpkin off, and chop that into smaller pieces to fit into a food processor / any device that will pulverise the pumpkin and mix it with a cup of flour.
Proccess the pumpkin and flour and turn it into a loafy thing, then snip off gnocchi sized chunks.
Boil these to completion in hot water.
Put the gnocchi into a pan with butter and fine parmesan (like a tablespoon) and stir until mixed though and slightly creamy.
(Sorry about how little info i have but i measure with my heart and i dont own a measuring cup, use good judgement and remember that you dont need alot of pumpkin, about 3 thick cut chunks per cup of flour)
