Back to my beloved bento box – an attempt at a balanced diet

Clockwise from top left: – *Potato and onion frittata* – sauté three large onions in a pan with olive oil and garlic. Add several handfuls of cooked waxy potatoes, then pour over five beaten eggs. Cook on the stove top for ten minutes, then finish on the grill. I added a quarter of the final frittata to my lunch today. – *Prosciutto cotto cubes* – *Goat’s cheese cubes* – *Mixed salad* – lettuce, avocado, spring onion, cherry tomato and mixed seeds. I also added my favourite dressing which is a mix of olive oil, balsamic vinegar, whole grain mustard, garlic and salt – *Mixed fruit and nuts*
