**Directions:**
1. Beat eggs in a large bowl and add flour – mix well until even and without lumps. 2. Add milk to the mixture and mix well. 3. Let it rest for about 10 minutes. 4. In a pan add few drops of oil and pour in pancake mixture to only cover the bottom of the pan. 5. Cook both sides until golden brown. 6. Serve.
**Note:** You can replace milk with water, will turn out delicious too.

Looks like the Dutch way of making pancakes. Also pancakes can have a nice color, crepes are supposed to be without browning and crepes are much sweeter.
Mix all together untill smooth. Replace rapeseedoil with beur noisette (cold browned butter) for extra taste. I like using rapeseedoil for baking them as it as high smokepoint so the whole house doesn’t become a big cloud of smoke.
