Making egg white omelets are probably the most healthy and cheap breakfast you can eat and I can’t express how easy it is:
1. Fire up the skillet and chop onions/mushrooms
2. Throw them in the skillet with some oil & salt. Saute for 5 minutes.
3. While that’s sauteing, fire up the second pan and fill with egg whites (and cheese). Cover lid.
4. Once veggies are done, turn off heat, top it with a handful of spinach and mix until it wilts. By the time it’s wilted, your omelet is done!!
I always top my with avocado and salsa. Altogether this probably costs $2 and I make enough for two people.
