Dulce de Leche Cookies (Recipe)

    Ingredients

    * 1 cup (225g) unsalted butter
    * 1 cup (200g) brown sugar
    * 1 tsp vanilla extract
    * 2 eggs
    * 2 1/2 cups (320g) flour
    * *If using Gluten Free flour, add 1/2 tsp xanthan gum*
    * 1 cup (112g) almond flour
    * 1 tsp baking powder
    * 1/4 tsp salt
    * 1/2 cup (150g) dulce de leche
    * *Optional coating*: 1/2 cup (100g) granulated sugar

    Directions

    1. Preheat the oven at 350°F (180°C)
    2. In one bowl, cream together 1 cup (225g) unsalted butter, 1 cup (200g) brown sugar, and 1 tsp vanilla extract (these are the wet ingredients)
    3. Mix in 2 eggs
    4. In a separate bowl, mix together 2 1/2 cups (320g) flour, 1 cup (112g) almond flour, ( 1 tsp baking powder, and 1/4 tsp salt (these are the dry ingredients)
    5. Slowly pour 1/4 portions of the dry ingredients into the wet ingredients, until fully combined
    6. Line a baking pan with either parchment paper – OR – cooking spray
    7. Take out golf ball sized portions of dough, roll them together between your palms, and place on panWith your thumb, carefully make an indent in each ball of dough, and add a dollop of dulce de leche. Fold the dough back over the dulce de leche to re-form an even cookie
    8. (*Optiona*l) If desired, roll each cookie in a bowl with granulated sugar for some added texture
    9. Bake the cookies in the oven at 350°F (180°C) for 12 minutes
    10. Take the cookies out of the oven, and allow the biscuits to cool for a minimum of 15 minutes before bitting into them
    11. Enjoy!
