Looking for an easy breakfast that’s cheap? Love McGriddles? I got you!
Today I made “McGriddle Casserole muffins” for breakfast. It makes 12 muffins and the leftovers will go in the freezer to feed us for 4 days of breakfasts throughout the month. You can heat them up in the microwave from frozen.
COST BREAKDOWN:
1 package of Aldi’s sausage links: $1.50
1 1/2 cups of Aldi’s brand pancake mix: $0.71
2 cups of Aldi’s brand milk: $0.38
4 Aldi’s brand eggs: $1.20
1 cup of Aldi’s brand shredded cheese: $0.81
1 TBLS of Fareway brand waffle syrup: $0.09
TOTAL COST: $4.69 or $0.39/muffin
Recipe:
Preheat oven to 350 degrees. Cook package of sausage links on stove. After cooked, dice up so that 4 pieces are in the bottom of each muffin cup. In a large bowl mix pancake mix, milk, and eggs. Add cheese and syrup. Stir to combine. Spray the pan with nonstick spray. Fill each muffin tin with 1/4 cup of the mix. Add any leftover mix little by little to each muffin tin. Bake in oven for 25-35 minutes, until a toothpick comes out clean.
