Only the pork was cooked in the crockpot; the tamales were cooked in a steamer. But I knew I couldn’t tease tamales and not show the end result!

    **Meat**:

    500g pork loin

    2 small onions, halved

    4-6 cloves garlic

    1 small can tomato paste (70g I think?) + 2 cans of water to get it all

    1/3 c apple cider vinegar

    1/4 c water

    1/4 c chipotle sauce (I used La Morena brand)

    Juice from 1 lime

    **Rub**

    Olive oil

    1 tbsp oregano

    2 tsp cumin

    Salt

    Pepper

    **Steps:**

    1) Rinse and dry meat. Trim skin/fat if necessary. Rub with oil and seasonings. Place in crockpot.

    2) Add remaining ingredients. Make sure liquid covers everything.

    3) Cook on high 4-5 hours or low 7-8 hours. Shred meat, remove any bones.
