1. In a large pot over medium high heat, bring the milk, butter, vanilla, mashed bananas and 1/4 cup sugar to a boil. Remove from the heat and cover the pot with plastic wrap. Let steep for 45 minutes. 2. Meanwhile, in a small bowl sift together the cornstarch and flour. Whisk the whole eggs, egg yolk and remaining 1/4 cup sugar until smooth and incorporated. 3. Remove the plastic wrap from the milk mixture. Puree the milk mixture in a blender with peanut butter until smooth. Return the mixture to the pot and place over medium high heat and bring to a simmer. 4. Begin streaming a small amount of the hot dairy into the egg mixture, whisking constantly to prevent the eggs from cooking. Continue whisking in the milk mixture until most of the liquid has been incorporated into the eggs. Pour the mixture in the bowl into a saucepot and place the pot over medium high heat, again whisking constantly, until the mixture comes to a boil and thickents, 5-8 minutes. 5. Remove from the heat and transfer to a heatproof bowl. Place a piece of plastic wrap directly on the surface of the pudding to prevent a skin from forming. Refrigerate overnight or until fully cooled. 6. When ready to serve, stir then divide the pudding into 4 bowls and top with sliced banana, roasted peanuts, vanilla wafer cookies and peanut butter chips.
