Forever. 🤭 Seriously though, it will last a long time, probably longer than it would take for you to eat it all.

I have to second the forever comment! As long as you don’t keep it a horrible mess and you use clean utensils every time you take kimchi out!

As long as you keep it cool, it’ll last for a while. For almost a year if you keep it near freezing temp.
You’ll know when it goes bad… it’ll explode with the precious Kimchi juices unless pressure is occasionally released. That’s when you need to cook kimchi fried rice, kimchi jjiaegae, budae jjiaegae or samgyupsal.
All stages of Kimchi is good unless it has mold on it… lol
