    Texture wise I would have gave it another minute or so but I get why you pulled it when you did. I wouldn’t hesitate to shovel it down my throat .

    good pull, maybe rest a few min. helps normalize the temp and cook

    Reverse sear. Question it, try it, love it. That is beyond well a third of the way in and blue in the middle. The way lots of us learned to appreciate steaks. I’d eat it and enjoy it.

    That is blue-rare in the middle and too cooked on the outer edges. It signifies poor technique.

    Invest in a meat thermometer and look into reverse searing and/or a sous vide.

    I’d say it’s a tad more rare than my taste, but I’d still eat the whole plate! Looks great to me. Good job

    Is this what would be considered between slightly blue and rare?
    Just wondering what people think

    The difference between raw (uncooked) and rare (cooked below optimum) is something you should learn. That, my friend, is raw. I suggest you refine your technique or use a temperature probe. It seems like your temperature was too high, and the meat wasn’t on long enough.

    FYI: filet mignon doesn’t do well on a grill. You just want to get the quick sear and then finish it in an oven at low temp.

    Take a bite! Then tell us if it’s perfect or undercooked, I like pretty rare so I might lean towards it’s perfect.
