1 tbsp oil. 1 diced red onion. 1 diced green capsicum. 1 teaspoon oregano. 1 teaspoon cumin. 1 teaspoon smoked paprika. 1 teaspoon coriander. 1 1/2 cup rice. 1 1/2 cup water. 1 diced tomato (canned is fine too I just didn’t have any) 400g kidney beans.
Sauté onion and capsicum until soft. Add herbs and spices and sauté until fragrant. Add tomatoes, rice and water. Stir it all together then add beans and gently stir. Simmer covered for 15/20 mins until rice is cooked. Serve with corn chips, sour cream and lime if you want or just eat it as is.
