    Several cans of plain diced tomato in juice.

    Tomato paste.

    Reduced beef stock (so the dish stays thicker).

    My seasoning, is coriander, cinnamon, clove, white and black pepper, chilli, smoked paprika, celery seeds and some fresh bay leaves.

    Equal Proportion mirepoix with the addition of equal capsicum and garlic to taste.

    Chuck steak, keep all the fat, it makes it taste good.

    Fry off the onions and capsicum slowly till it is slightly browned and then add tomato paste and fry it off, then add to the crock pot.

    Finally dice the rest of the mirepoix (celery and carrots) an add to crock pot (no point frying off in low and slow)

    Dice the chuck steak in small 2cm ish cubes an add to the crock pot.

    There should be enough sauce and vegetables to coat all your meat without adding water.

    Add all your spices, stir well.

    Only keep your bay leaves in till you feel they have given enough flavour. Only salt after you have softened the meat and reduced the sauce a bit so you get a better feel for the seasoning.

    I use whole spices and dry toast them in a pan and chuck them in a spice grinder/coffee grinder and make it fresh.

    I tend to run on high for 2 hours and then then low and slow for the next 4ish hours??

    Serve with your carb choice, we having it with spiral pasta.
