Chicken and noodles over mashed potatoes for under $1.50!

Mashed potatoes: – 2 peeled potatoes – 15 cents each
– 1 garlic clove – 2 cents
– 2 tsp avocado oil – 16 cents
– 3 or so tablespoons of milk – 3 cents
– Cube of cream cheese – 9 cents
Chicken and noodles: – half cup of chicken + 2 and a half cups broth- 65 cents
– small portion of Amish noodles – 25 cents
– half an onion – 7 cents
Bringing my grand total to $1.42!
To make this, boil 2 peeled potatoes until soft. Drain water, then add milk, cream cheese, a clove of minced garlic and avocado oil (or another fat of your choice). Combine using a mixer, blender, or manually. Add to a small bowl, then boil noodles in chicken broth. Add in pre cooked, pre shredded chicken and pour over mashed potatoes or enjoy separately. If you desire, add some sauteed onion and some salt and pepper for taste.
I got my potatoes, onion, and garlic from a Flashfood 5 dollar produce box, avo oil from Trader Joes, and made my chicken and broth from a whole chicken i found in the reduced section at Kroger. Overall, it’s a very balanced and satiating dinner, I’ll definitely be making it again!
