Finally, I made something good in the crock pot! Super cost efficient for me too!
2 1 (one) /2 lb pork shoulder 2 fajita seasoning packets 1 (one) whole diced white onion, sautéed 5 cloves of garlic, minced, sautéed 1 (one) jalapeño, chopped, sautéed 2 whole oranges squeezed left in pot Juice of 1 (one) lime 1 (one) can of chipotles in adobo, mince chipotles 20ish leaves of cilantro, minced finely Dash of oregano and salt to taste
High on 6 hours Remove pork and broil for 5 minutes at 500. Don’t look at it, don’t listen to it, don’t breath next to it. It will be okay for 5 minutes. Remove and rest.
Serve on fried tortillas, with cheese of choice, pico, sour cream, beans, rice.
P.S. I could’ve fit a LOT more pork shoulder in the pot.

Respectfully, this is, in any case, guisado de cerdo, slow-cooked pork shoulder with TexMex flavoring, not carnitas. I don’t doubt that it’s good, but Mexican gastronomy deserves respect.
