The smoked chicken thigh was brined in brown sugar and salt water 2:1:16 ratio for 8 hours. Then smoked for 2 hours over hardwood charcoal with some cherry wood in a char-broil bullet smoker. 1 cup of rice in a cooker split 5 ways, and one lb of broccoli split 5 ways after being steamed for 15 minutes.
The burrito tortillas were low carb (50 cal) keto friendly. I combined 1.5lbs of ground beef cooked with half a white onion chopped, then drained of grease, mixed with 1 can of refried beans and 2 packages of Fillos Peruvian lentils. I use cholula hot sauce with the burritos. These are absolutely loaded with fiber and protein and taste great. Finish them in an air fryer or oven to crisp.
The chicken is roughly 450ish-500 calories per prep because I had more than 1 thigh per container. The burritos come in at about 550 calories for 2 burritos.
