Mine do that if I put vinegar in the canner water. Most of it will rub off and I keep using them. I don’t like how they feel! But they work the same.

Normal part of processing. I found processing meats does seem to discolor them more. As long as you can easily put them on a hat, they are still usable. When they are no longer usable then you can recycle or upcycle them. Pinterest has a lot of cute projects to do with old rings.
