Moroccan-Style Peanut & Onion Dip

    **Ingredients**

    * 1 cup unsalted roasted peanuts
    * 1 garlic clove, minced
    * 1/2 medium red onion, chopped
    * 1 large tomato, chopped
    * 2 tbsp tomato paste
    * 2 tbsp brown sugar
    * 1 tsp paprika
    * 1 tsp ground cumin
    * 1 tsp cayenne pepper
    * 1/2 tsp salt
    * 2 tbsp lemon juice
    * 1/2 cup peanut oil (or vegetable oil)
    * Fresh parsley or cilantro for garnish (optional)

    **Instructions**

    1. In a blender or food processor, grind the peanuts into paste.
    2. Blend all ingredients in bowl until smooth.
    3. Taste and adjust the seasoning to preference.
    4. Garnish with fresh parsley or cilantro, if desired.
    5. Serve dip with sliced vegetables, pita chips, or crackers.
