  1. Chicken salad sandwich + mini open face sandwich – all for about 300 calories!

Buns are a recipe from [The Spruce Eats](https://www.thespruceeats.com/homemade-sandwich-buns-for-barbecue-3051828), I made 2 oz portions instead of 4 oz, didn’t do an egg wash or corn meal. Came out to 121 calories per bun.

Sprouts are home grown in a jar on my countertop. If you haven’t ever looked into it I HIGHLY recommend trying sprouting, so much tastier than lettuce IMO and super easy (plus no risk of e coli like commercially produced sprouts)

Chicken salad is one 5 oz can chicken (100 calories), 1/4 mashed avocado (80 calories, sometimes I just do miracle whip which would only be 40 calories), some sriracha and about a Tbsp of chopped onion (5 calories)

The buns are big enough that I split them into thirds so that I can have a full sammy and an open face sammy since the chicken salad won’t all fit on the bun otherwise. I have been eating this meal for lunch daily and it’s so filling and satisfying and nice.

Also add a lil sprinkle of flaky salt on top if you’re feelin fancy (aka always)
