How to get rid of big cheese blisters?

    I used the NY style dough recipe from the wiki. Low-moisture part skim cheese. Baked on a stone at 550 F for 9 minutes. Would low- moisture whole milk work better?

    Fuck off. Couldn’t you have called them bubbles… now next time I eat a pizza I’m going to be mildly uncomfortable thinking about cheese blisters and I swear to god if there is oil in one I’m going to gag and blame you.

    From my experience, this usually happens when I use expired cheese.

    I’m guessing too much moisture in the cheese. I’m not a fucking expert though

    Stop putting cheese on your pizza and i guarantee those blisters disappear.

    Use whole milk low moisture mozzerellq freshly grated if possible

    Put in freezer for about 20 minutes before baking so the dough will cook before the cheese has time to overcook

    Depending on the oven, I’ve had fantastic luck with thickly sliced provolone and sliced mozz. Tear it into pieces. Throw it on the pie. Call me a heathen for not shredding, but it works and the combo is delicious.
