    **Ingredients**
    1 cup rinsed uncooked quinoa, 1 can black beans, 1.5 cups red enchilada sauce, 1 tsp cumin, 1 tsp chili powder, 1 tsp onion powder, 0.5 tsp garlic salt, 2 cups cheese

    **Directions**
    1. Rinse peppers and cut off tops. Core and remove seeds and ribs.
    2. In large bowl, combine quinoa, enchilada sauce, beans, spices, and 1 cup cheese. Mix well.
    3. Scoop one cup quinoa mixture into each pepper. Place upright in crockpot with 0.5 cup water in crock.
    4. Cook LOW for 6 hours. After 6 hours top with remaining cheese. Cook 10 more minutes

    **Changes**
    -Skipped refried beans, black beans were enough
