Also before people start dropping the gamja = pork spine thing, that’s a word of mouth myth with no factual basis.

Sometimes yes. Sometimes no. It depends upon the restaurant where I ate it. Sometimes it would feel “sandy” or sometimes it feels like there was too much gochukaru in it, but most of the time it would taste great.

I love it. And when you have that mustard on the side to dip in the meat (at least here in Daegu that’s a thing), it’s even better. There aren’t many traditional-ish Korean dishes that have that mustard as a condiment. Only downside – it can be a real challenge to get the meat (pork) off the bones with chopsticks. It’s usually vertebrae, which has soft meat, but often not a great amount, and it’s stuck in nooks and crannies of the bones. Different restaurants of course will vary in how generous they are with their cuts of back and neck.

And what is your opinion on [Maangchi’s recipe of this dish](https://www.maangchi.com/recipe/gamjatang)? I was just thinking of trying to cook it, but gamjatang on your photo looks way different from what she cooks in her video…
Also, can you recommend a good recipe, please?

I think it’s the GOAT of Korean soups. But I do think it should be named pork neck soup instead of potato soup lol
