    Caprese Sandwich: pesto, mozzarella, tomato and Italian bread with fruit.

    Cracker box: crackers, salami, cheddar and a cheese mix from the store, with fruit. These last me two days.

    Gnocchi with mushrooms and greens: this is a vegetarian meal for those of us cool with that. Chicken feta sausage for those who need meat in a meal. Gnocchi tossed with olive oil and a pound of mixed mushrooms, baked at 425 for 20 minutes. Then add kale salt and pepper and cook 5 minutes longer. I add a horseradish honey sauce at the end.

    Chicken soup: 2tbsp olive oil, 1 onion-chopped, 4 carrots-diced, salt and pepper, 2tbsp minced ginger, 2Qts chicken stock, 2tbsp white miso paste, 1# boneless chicken, 12oz cheese ravioli, 1/4cup pesto, 2 cups peas, juice of one lemon.
    Heat oil in large Dutch oven, cook onion 8-10 minutes, until starting to darken. Add carrots and cook 5 minutes to soft. Add ginger and cook one minute. Slowly add broth. Add miso and chicken. Cover and simmer for 30 minutes. Shred chicken. If eating soup right away, cook pasta in soup, if not, add pesto and lemon juice and remove from heat. Add peas when slightly cooled. Cook ravioli separate and add when reheating soup so they don’t break down.
