Serves 1 and can be made keto if you use pork rind panko. This is an “I eyeballed it” recipe. Made on my dash mini waffle iron. Low cost and beats 12.99 for fried pickles at my restaurant.
Waffles:
1/2 cup panko bread crumbs 1 pickle sliced thin rounds then diced 1/4 to 1/2 cup of mozzarella or other easy melt cheese like swiss or provolone 1 egg slightly beaten Salt, pepper, to taste 1 tsp of garlic powder Your culinary herb of choice, I used a bit of dried sill Optional – 1 tablespoon bacon bits or crumbles
Heat up your waffle iron.
Mix the egg, breadcrumbs pickle juice and spices together in a bowl. Stir in pickles and cheese. Batter will be very thick and not like pancake batter.
Coat waffle iron with non stick spray. Smush about 1/4 cup or so of mixture on it. Cook for 3-5 minutes until golden brown and it mostly stops steaming, check frequently after 3 minute mark
Meanwhile make your dipping sauce Yougurt Chipotle dipping sauce:
2 Tablespoons plain Greek yogurt 1 Tablespoon mayonnaise 1tsp lime juice 1-2 tsp smoked chipotle pepper ( more if you like heat) Pinch of salt
Stir it all together and put in small bowl.
When waffles are done allow to cool slightly before serving with dip. If you aren’t a heathen goblin like me you can cut them into strips ( soldiers) for easier dunking.
