It tastes pretty good for an extremely low effort meal with minimal ingredients!

Wtf is it: Slow cooked chicken in enchilada sauce
The key Ingredients:
2 lbs of skinless/boneless chicken breasts.
2 10 oz cans of El Paso’s Red Enchilada sauce.
3 teaspoons of chili powder
The other ingredients:
*I would use your best judgment on the amount of spices you use because I’m pretty sure my taste buds are immune to garlic powder and onion powder at this point, so I used a shit ton.*
Garlic Powder
Onion Powder
Cinnamon (a pinch)
Coriander
Paprika
Cumin
Salt
Pepper
Green onion
Mexican 4 cheese blend
Sour cream
The steps:
I lightly pan-fried the chicken with some olive oil and seasoned with salt and pepper.
Then threw the chicken in the crockpot with the enchilada sauce and added the aforementioned spices.
I also had 3 tomatoes that I needed to get rid of and blended them up in there, but I would honestly omit this next time as the consistency of the sauce was a bit too watery, even though the flavor was on point.
I thickened the sauce up with an equal amount of cornstarch and cold water at the end of the cooking process to help out with the consistency.
Anyway, I cooked it all on low for 6 hours. Shredded the chicken in the sauce when it was done and then threw the sludge on a huge ass wrap.
Topped it with some green onion, a Mexican 4 cheese blend, and sour cream.
You could go crazy and even bake the wraps, but alas, I am lazy af today.

This looks and sounds really good!! Gonna try it next week. As someone who has eating habits similar to your husband (I’m super picky and don’t like a lot of foods!) I can appreciate the simplicity and ease of making something like this. Thanks!!
