Texas Beef with Butternut Squash

    Ingredients:

    * 1.5lbs beef chuck roast
    * 4 cups cubed and peeled butternut squash
    * Two 14oz cans fire roasted tomatoes
    * 1 1/2C no salt added beef broth or water
    * 3/4 C onion (one large)
    * One 4oz can green chiles
    * 1TBS ground Ancho Chile powder
    * 2tsp unsweetened cocoa powder
    * 1tsp ground cumin
    * 1 tsp dried oregano
    * 3 cloves of garlic

    Place all ingredients in slow cooker for 8-10 hours on low. Top with fresh cilantro.

    I put mine over broccoli but the recipe suggests polenta
