Kalbi is the gift that keeps on giving — after eating kalbi the bones can be gnawed on to enjoy the tendon. Some places will trim it for you as well as in the video (kanghodong baekjeong in LA)

I went to this Korean restaurant in sf that had like 24 hour sous vide kalbi jjim and the tendon was the most amazing flavor and texture.
