The recipe is pretty bare, but you will need brown rice (white rice is fine), but this needs to be day-old rice. For spices, I used the following, but please change as needed.
* Smoked Paprika * Cumin * Garlic * Salt & Pepper
Toss a knob of butter into your pan and begin to curdle your eggs. You want small curds of eggs, so stir vigorously. Once your eggs are to your liking scrambled, wise take them out. For my recipe, I used hard tofu. Add a bit more butter and cook the tofu until has color. Once tofu has color go ahead add the rice, eggs and spinach in and toss until everything is incorporated. I used a little bit of rice vinegar here, but feel free to use whatever you want.
