[Homemade] – Buttermilk Fried Chicken Tenders

    ### Wet Ingredients
    * 1kg chicken tenders (fillets)
    * 1L buttermilk (enough to cover the chicken)
    * Your favorite hot sauce

    ### Dry Ingredients
    * AP Flour (enough to bread the chicken)
    * Spices to taste (salt, fresh cracked pep, paprika; smoked and spicy, garlic powder, onion powder, dried oregano, dried thyme, dried parsley etc.)

    ## Instructions
    1. Place chicken in a large bowl and cover with buttermilk. Add hot sauce to taste and mix thoroughly. Let sit for at least 1 to 2 hours (or overnight in the fridge).
    2. Mix your flour and spices in a large bowl. I like to use a lot of spices; but you can use as little or as much as you like.
    3. Bread the chicken in the spiced flour without shaking off too much of the excess buttermilk and making sure everything is thoroughly coated.
    4. Place coated chicken on an oven rack and let sit for 15-20 minutes before frying.
    5. Deep-fry in oil at 180 Celsius (~350F) in small batches until golden brown to your liking and cooked through.
    6. When done, place on a cooling rack with paper towels under it to absorb the excess oil.
    7. Serve with french-fries, white rice, more hot sauce or whatever else you like, it goes great with everything 🙂

    I spend the extra to use peanut oil when making this, tastes much better to me than using vegetable or canola oil.

    Fried chicken is probably my absolute favorite food. I could eat it anytime. Now I want some from my local restaurant.

    Idk how to express this without it sounding like a critique, but I swear it is a compliment. They don’t look like what a good chicken tender should look like however they look like the chicken tenders i picture in my head when I want chicken tenders.

    I would question the use of dried leaf herbs in the flour mixture. They will just burn in the oil and could leave a bitter taste. Otherwise, it looks great!

    Try adding some white pepper to your spice blend. It’s one of the most predominant flavors of sourthern fried chicken and often gets overlooked.
