Spaghetti cherry tomatoes sauce with ricotta cheese and dried tomatoes in oil By Vito Chef Italy (my nonna recipe)

    Hello I’m Vito from Italy,

    this is my grandma recipe that she cooked when she made fresh ricotta 😉 My family are farmer from southern Italy (Salerno) and I’m honored to share with you this fantastic dish.

    **Recipe:**

    * Spaghetti 400gr / 14oz
    * Pomodorini ciliegini 250gr / 9oz
    * Dried tomatoes in oil 6-7pcs
    * Ricotta 200gr / 7oz
    * Garlic, oregano, EV olive oil, salt e ground pepper to taste

    **Procedure:**

    1. Cut the dried tomatoes and add them to the ricotta, mix well and keep aside
    2. Cut the cherry tomatoes, add olive oil, salt and oregano and keep aside
    3. Add a clove of garlic on the chopping board, add a drizzle of EV olive oil and stat chopping it then crush it until it becomes a pulp of garlic. Add it to the cherry tomatoes and mix well.
    4. Put a pot with water on a medium heat and wait that it starts boiling. Then add the salt and pasta
    5. EV olive Oil in the pan, add the garlic and let it brown for 2-3 minutes. Then add the cherry tomatoes and after few min add a little of pasta water (cook for 5min medium heat)
    6. Add ground pepper and salt to taste
    7. Drain and toss the pasta with the sauce, add half of ricotta and pasta water stirring well
    8.
    Add a drizzle of EVO oil and more ricotta with a dried tomatoes on top
