So, cleaned the chicken and added some sliced onion and a bundle of fresh rosemary, sage, and thyme to the cavity. Salt, pepper, and paprika to the outside, rubbed on and under the skin. Also added some smashed garlic cloves under the skin. Made a ring with some foil so it wasn’t resting directly on the bottom of the crockpot and added more herbs. In the crockpot on high for about 3.5-4 hours (kind of lost track of the exact time), then I put it under the broiler for about 5 minutes to crisp up the skin. Leftovers for salads and whatever else for days.
