Chickpea & mozzarella salad

    Ingredients:

    ½ a can of chickpeas (about 150 gr)

    100 gr of mozzarella

    3 small tomatoes

    ⅔ of big cucumber

    ½ small onion

    ½ small red onion

    3 tbsp vegetable oil

    1 tbsp balsamic vinegar

    dryed basil

    salt

    Makes 2-3 servings

    Oil/vinegar/juices mixture on your plate can be eaten with bread cause why wash it from your plate if it can be additional food/flavour

    Everything (except for oil, vinegar, basil and salt) was bought on sale or found on a reduced price shelf so its cost is less than my wage per hour (and my wage is sad). It’s so nice to feel like you’re eating fancy food.

    For what it is worth-my soup kitchen was donated 3 PALLETS of chickpeas. We used then in So Many dishes, that I just don’t want to see them, ever again.
