    Ingredients:

    * 1 block of tofu
    * 1 potato
    * 80g tomato ketchup
    * Aged vinegar, to taste
    * 15g white sugar
    * 50g water
    * Basil, to taste
    * Pinch of salt
    * Pinch of white pepper powder

    Directions:

    1. Mix the tomato ketchup, white sugar, water and aged vinegar together to make a sweet and sour sauce.

    2. Chop the basil into tiny pieces and simmer them with the sweet and sour sauce until it comes to a boil. Then, set aside for later.

    3. Cut the potato into thin slices with the skin still on, then pan-fry in olive oil until crispy.

    4. Slice the tofu into squares and pan-fry until fragrant. Then, add the potato slices into the pan and season with salt and white pepper powder.

    5. Stack the tofu and potatoes alternately in a plate, then drizzle the sweet and sour sauce on top. Finally, sprinkle some basil shreds on top, then serve.
