I’m always excited by what I call garbage meals!
That’s what I call my leftovers I’ve made into stew, soup or my favorite fried rice!
Like I made a great ( and cheap)milk Braised Pork in the slow cooker last weekend. After portioning it out for my lunches I had the tiniest amount left over that will go in my rice cooker fried rice along with the carrot that’s not soup material quite yet, and the quarter cup of frozen vegetables.
One time I had bbq pork left over and I added it in with the fried rice sauce it turned into poor man’s Chinese pork belly fried rice and it was delicious.

On medium heat crack and whisk 2 eggs. Cook until scrambled then add rice and what ever mix-ins you want (in my case it was costco rotisserie chicken). Add 2 tsp soy sauce, 2 tsp of fish sauce, a hefty pinch of msg, a hefty pinch of sugar, and 2 tbsp ketchup. Mix until thuroughly combined. Flatten rice in pan and let cook until rice is crispy. Serve and enjoy! All together this meal is around 70 cents and is pretty dang healthy as well!
