Comment before me is basically right. However, i make a 3 cheese grilled cheese and part of it is like this. I do it this way since it lets me put 3 types of shredded cheese, bunch of it, on a small sandwich. No other easier way to make sure all that cheese stays on that sandwich.

I see the fried sides of the cheese folding over each other in layers. So you would have crispy parts of cheese in the middle. Looks like either green chile or mushrooms on the patty. FAT fuckin buns.
I would absolutely destroy that burger.

The cheese is melted on a raclette iron under a broiler or next to an open flame. The Swisse eat it over potatoes with pearl onions and little pickles. They have a special cheese for it.
