I put 10 lb of bone in leg quarters in the slow cooker (slow cooker is full) and turned it on high for 5 hours. Is it going to be an issue where I’d get food poisoning from the slow rise in temperature at the center or do you think we will survive this one? I’m adding a mole sauce to it once it heats up enough.

It should be fine, but you should always check with a meat thermometer regardless.
Remove the skin first it’s a lot less mess and more healthy
Slow cooker chicken comes out great! I place a whole hen beast side down and cook on high all day while at work. The bones separate from the meat very easily. Same with pork ribs btw.
Thereβs no way that chicken will be good.
Top it off with NyQuil and it should counteract any foodborne illnesses. r/SLPT
Only if you don’t cook it
As long as it went into the slow cooker thawed it should be fine. The danger of meat come from slow cooking frozen meat. It would spend too much time in the βdanger zoneβ.
