    Found some baby backs on sale so time to experiment! These were amazing! I’m used to cooking ribs at 275. These were around 500. These are night and day different from smoked ribs, but they were very juicy and had a nice tender bite. More pork chop-like of course. The best part is the crispy and salty fatty bits. Will do again.
