I’m seeing a lot of “white wine pairs better with fish” comments and that’s just a generalization.
The best wine to go with any food is the wine you like. If you don’t like white wine, you’re not going to like it with fish. If you love big bold reds you’ll love it with a white delicate fish.
There are always a few exceptions and sushi is a major one. You shouldn’t drink wood barrel aged red wine with sushi because there is no salt in the food which will make your wine taste very bitter.
Flavor is formed both by what parts of your palette are engaged as well as which parts are blocked. If you take a bite of salty food, bitter foods/drinks will seem less bitter because the salt has “blocked” that taste receptor
Source: used to work fine dining with a few different sommeliers who would always complain that people didn’t like their wine because they ordered white wine with fish when they hate white wine.
