    One of the best kitchen hacks I know! A common method in Asian cuisine, and it’s a game changer for shatteringly-crisp chicken skin!

    The thighs were dry brined with 2% kosher salt by weight, then dusted off. Pour boiling water over the chicken skin until the subcutaneous fat renders and the skin gets very thin and translucent. Pat them dry, season, and cook! Insane skin.
