Basically cut up dutch gold potatoes into small pieces, seasoned well (salt, pepper, garlic powder, onion powder, cayenne paprika) – air fried for about 12 min at 390 till crispy. Meanwhile scrambled one egg and cooked corn tortillas quickly on the flame of an open burner. Assembled each tortilla with crispy potatoes, scrambled egg, cilantro crema, salsa verde, shredded cabbage and cotija. SO filling, could have easily just went with 3.
The low cal/high protein cilantro crema is my new obsession I came up with this week – combine 1 cup nonfat or 2% greek yogurt, 1/2 cup cottage cheese, big bunch of cilantro, big bunch green onion, a few garlic cloves, juice of 1.5 limes, a bit of honey and 1 fresh jalapeno – blend or use the food processor. Salt to taste. Add water a tablespoon at a time till it reaches the consistency you want. Let it sit in the fridge for at least an hour.
