– Anduille Sausage (sliced thin) – 2 boneless chicken breasts (sliced thin) – 1 red onion (diced) – 1 red bell pepper (diced) – 1 celery stalk (diced) – 1 jalapeno (seeds removed and diced) – 3-4 mushrooms of your choice (sliced thin) – 6-8 cloves garlic (minced) – medium grain rice (Calrose or Sushi rice work great) – chicken stock – 1 teaspoon paprika – 1 teaspoon thyme – 1 teaspoon dried oregano – 1/2 teaspoon cayenne powder – 1/2 teaspoon hot sauce – 1 teaspoon cajun seasoning (Slap Ya Mama or Tony Chachere’s Creole seasoning). (Can leave out if not available) – salt and pepper to taste.
Steps:
1. Add two portions of rice to rice cooker. Fill with chicken stock to just under appropriate line. Don’t start rice cooker yet. 2. Brown ingredients in stages. First anduille sausage, then chicken, then your Trinity (onions, bell pepper, celery, jalapeno and garlic), finally mushrooms. As each finishes, transfer into rice cooker. 3. Add spices, salt and pepper, and hot sauce to rice cooker. 4. Run rice cooker. If it has a “harder” setting, use that. 5. When rice is done, fry in large pan or wok like fried rice. You won’t need any additional oil.
Rice will have a much nicer texture, in my opinion, than typical jambalaya.
