Miso Glazed Salmon Rice Bowls (Meal prep friendly)

    Miso is a fermented soybean product that is commonly used in Japanese cooking. Its delicate umami enhances the flavour of salmon without overwhelming it, and a honey miso glaze is great to keep things fresh and interesting to the palate!

    **Ingredients**

    Listed ingredients serve 2, but it scales easily for meal prep. If making more than one sheet pan’s worth of salmon, eat the first batch while another batch roasts.

    * Rice – 1 cup, Jasmine
    * Salmon – 300-400g, or up to 1lb
    * Glaze – start with a tablespoon each of miso, soy sauce and honey. Taste and adjust.
    * String beans – about 1lb
    * Minced garlic to taste

    **Instructions**

    1. Get rice cooking in a rice cooker
    2. Mix up the glaze in a big bowl and toss the salmon in it to coat. Spread salmon out onto foil lined baking sheets.
    3. Roast salmon in batches, in the oven at 180c/350f for 10-20 minutes, depending on size and preferred doneness
    4. While salmon is roasting, wash and cut the string beans. Stir fry with minced garlic
    5. Assemble and serve.
