This was a super fun (if not even more time consuming than usual) plate to make!
I started off with a simple dough from my handy pasta bible:
2 1/3 cups flour
3 eggs
Tablespoon of olive oil
Tablespoon of water if necessary
Ran it through my kitchen-aid roller till 5 because I like a thicker pasta.
My boyfriend is a simple man who has a dairy issue, so I tried making marinara sauce for the first time [with this recipe](https://thecozycook.com/homemade-marinara-sauce/) and it came out great! I’m not the biggest fan of tomato sauce, and even I had some for my own plate after stealing some of his.
I did add garlic to the filling, and next time would also add some roasted pine nuts to the filling/on top but all in all, it was all delicious. The beet and lemon zest pair so well together, and the nuttiness of the browned butter really makes it all sing. I’d happily make this again if I wanted to impress someone, and can’t wait for the rest I’d the weeks dinner!
